Ingredients:

  • Extra Virgin Olive Oil: 1/2 cup (120 ml)
  • Red Wine Vinegar OR White Wine Vinegar OR Apple Cider Vinegar OR Balsamic Vinegar OR Lemon Juice: 1/4 cup (60 ml)
  • Dijon Mustard: 1 teaspoon (5 ml)
  • Honey or Maple Syrup (optional): 1 teaspoon (5 ml)
  • Salt: 1/4 teaspoon (1.25 ml)
  • Black Pepper: 1/4 teaspoon (1.25 ml)
  • Minced Garlic or Shallot (optional): 1-2 cloves
  • Fresh Herbs (optional): 1-2 tablespoons
  • Spices (optional): Pinch, to taste
  • Grated Parmesan Cheese (optional): 1-2 tablespoons

Instructions:

  1. In a small mixing bowl, whisk together the Dijon mustard, vinegar (or lemon juice), honey (if using), salt, and pepper.
  2. Slowly drizzle in the olive oil while continuously whisking. Continue whisking until the mixture is emulsified and appears slightly thickened.
  3. Taste the vinaigrette and adjust the seasoning as needed. Add more salt, pepper, honey, or vinegar to suit your taste.
  4. Stir in any desired add-ins, such as minced garlic, herbs, or spices.
  5. Transfer the vinaigrette to a jar or airtight container. Store in the refrigerator. Let it come to room temperature before using. Shake or whisk before use.
