Ingredients:

  • 1/2 cup (1 stick) or 113g Unsalted Butter, cold, cut into cubes
  • 1 cup (240ml) Heavy Cream
  • 1 1/2 cups (approx. 150g) Freshly Grated Parmesan Cheese
  • 1/4 teaspoon Freshly Ground Black Pepper
  • Pinch of Salt (taste and adjust)
  • Optional: 1/4 teaspoon Freshly Grated Nutmeg

Instructions:

  1. In a medium saucepan over medium-low heat, melt the butter. Don't let it brown!
  2. Pour in the heavy cream and gently bring to a simmer. Reduce heat to low.
  3. Gradually add the grated Parmesan cheese, whisking constantly until melted and smooth.
  4. Season with black pepper and salt to taste. Stir in nutmeg (if using).
  5. Toss with your favorite pasta and serve immediately!
