Ingredients:

  • 2 slices sourdough bread (approximately 4 oz/115g total weight)
  • 2 tablespoons unsalted butter, softened (28g)
  • 2 slices sharp cheddar cheese (approximately 2 oz/56g total weight)
  • 1 slice provolone cheese (approximately 0.5 oz/14g total weight)
  • 1 teaspoon mayonnaise
  • Pinch of garlic powder

Instructions:

  1. Spread softened butter evenly on one side of each slice of bread.
  2. On the unbuttered side of one slice of bread, place cheddar cheese first, then provolone.
  3. Spread the mayonnaise very thinly on the other unbuttered slice of bread. Sprinkle lightly with garlic powder.
  4. Place the mayo/garlic bread slice on top of the cheese layer, mayo-side down. Assemble the sandwich.
  5. Place the sandwich in the cold skillet. Turn the heat to medium-low (low and slow is key!).
  6. Cook until the bottom slice of bread is golden brown and the cheese is starting to melt (about 4-6 minutes). Grill one side.
  7. Flip the sandwich carefully. Continue cooking until the other side is golden brown and the cheese is completely melted and gooey (about 4-6 minutes more). Flip and finish.
  8. Remove the grilled cheese from the skillet and cut it in half. Serve immediately. The melted cheese should be stretchy and inviting. Serve immediately the best grilled cheese recipe.
