Ingredients:
- 2.5 lbs chicken wings, drumettes and wingettes separated
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- 1 tbsp olive oil
Instructions:
- Pat the chicken wings completely dry with paper towels.
- In a large bowl, combine baking powder, salt, pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper (if using).
- Toss the dried wings in the spice mixture, ensuring each wing is evenly coated. Drizzle with olive oil and toss again.
- Arrange the wings in a single layer on a wire rack placed on a baking sheet. Refrigerate for at least 30 minutes.
- Preheat oven to 250°F (120°C). Bake the wings for 30 minutes.
- Increase the oven temperature to 425°F (220°C). Bake for another 20-25 minutes, or until the wings are golden brown and crispy. Check the internal temperature reaches 165°F (74°C).
- Remove from oven and serve immediately with your favourite dipping sauces.
