Ingredients:

  • 2.5 lbs chicken wings, drumettes and wingettes separated
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 tbsp olive oil

Instructions:

  1. Pat the chicken wings completely dry with paper towels.
  2. In a large bowl, combine baking powder, salt, pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper (if using).
  3. Toss the dried wings in the spice mixture, ensuring each wing is evenly coated. Drizzle with olive oil and toss again.
  4. Arrange the wings in a single layer on a wire rack placed on a baking sheet. Refrigerate for at least 30 minutes.
  5. Preheat oven to 250°F (120°C). Bake the wings for 30 minutes.
  6. Increase the oven temperature to 425°F (220°C). Bake for another 20-25 minutes, or until the wings are golden brown and crispy. Check the internal temperature reaches 165°F (74°C).
  7. Remove from oven and serve immediately with your favourite dipping sauces.
