Ingredients:
- 1 cup (240ml) plain Greek yogurt
- 1/2 cup (120ml) cucumber, peeled, seeded, and finely grated
- 2 cloves garlic, minced
- 1 tablespoon (15ml) lemon juice, freshly squeezed
- 1 tablespoon (15ml) extra virgin olive oil
- 1 tablespoon (15ml) chopped fresh dill (or 1 teaspoon dried dill)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
- Grate the cucumber, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and pepper.
- Stir until all ingredients are thoroughly combined.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld together.
- Before serving, taste the sauce and adjust seasoning as needed.
