Ingredients:

  • 1 cup (240ml) plain Greek yogurt
  • 1/2 cup (120ml) cucumber, peeled, seeded, and finely grated
  • 2 cloves garlic, minced
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • 1 tablespoon (15ml) extra virgin olive oil
  • 1 tablespoon (15ml) chopped fresh dill (or 1 teaspoon dried dill)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions:

  1. Grate the cucumber, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and pepper.
  3. Stir until all ingredients are thoroughly combined.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld together.
  5. Before serving, taste the sauce and adjust seasoning as needed.
