Ingredients:
- 5 lbs zucchini, finely diced or shredded
- 1 cup onion, finely minced
- 1 cup green bell pepper, finely minced
- 1 cup red bell pepper, finely minced
- 2 cups apple cider vinegar
- 2 cups granulated sugar
- 2 tbsp pickling salt
- 1 tbsp celery seed
- 1 tsp turmeric powder
- 2 tbsp cornstarch dissolved in 2 tbsp water
Instructions:
- Finely dice or shred the zucchini, onions, and peppers. Keep the sizes uniform so they cook at the same rate.
- In a large bowl, toss the prepared vegetables with the pickling salt and let them sit for 2 hours to sweat.
- Pour the mixture into a colander. Rinse under cold water to remove excess salt, then squeeze the vegetables firmly to remove all liquid.
- Put the drained vegetables, apple cider vinegar, sugar, celery seed, and turmeric into your stainless steel pot.
- Heat over medium high until the liquid is bubbling rapidly.
- Lower heat to medium. Stir often for 20-25 mins until the vegetables are tender but still have a bite.
- Stir in the cornstarch slurry. Boil for 2-5 mins until the liquid becomes glossy and clings to the veg.
- Remove from heat and let the Sweet Zucchini Relish cool slightly before jarring.
