Ingredients:

  • 5 lbs zucchini, finely diced or shredded
  • 1 cup onion, finely minced
  • 1 cup green bell pepper, finely minced
  • 1 cup red bell pepper, finely minced
  • 2 cups apple cider vinegar
  • 2 cups granulated sugar
  • 2 tbsp pickling salt
  • 1 tbsp celery seed
  • 1 tsp turmeric powder
  • 2 tbsp cornstarch dissolved in 2 tbsp water

Instructions:

  1. Finely dice or shred the zucchini, onions, and peppers. Keep the sizes uniform so they cook at the same rate.
  2. In a large bowl, toss the prepared vegetables with the pickling salt and let them sit for 2 hours to sweat.
  3. Pour the mixture into a colander. Rinse under cold water to remove excess salt, then squeeze the vegetables firmly to remove all liquid.
  4. Put the drained vegetables, apple cider vinegar, sugar, celery seed, and turmeric into your stainless steel pot.
  5. Heat over medium high until the liquid is bubbling rapidly.
  6. Lower heat to medium. Stir often for 20-25 mins until the vegetables are tender but still have a bite.
  7. Stir in the cornstarch slurry. Boil for 2-5 mins until the liquid becomes glossy and clings to the veg.
  8. Remove from heat and let the Sweet Zucchini Relish cool slightly before jarring.
