Ingredients:
- 2 lbs fresh green beans, stem ends trimmed
- 4 cloves garlic, smashed
- 2 tsp fresh ginger, thinly sliced
- 1 medium jalapeño, sliced into rounds
- 1 cup white distilled vinegar
- 1 cup water
- 1/3 cup cane sugar
- 1 tbsp pickling salt
- 1 tbsp mustard seeds
- 1 tsp coriander seeds
- 1 tsp dill seed
- 1/2 tsp crushed red pepper flakes
- 1 tsp black peppercorns
Instructions:
- Wash the green beans thoroughly, trim the stem ends, and cut the beans into 3-inch lengths.
- Optional: For a traditional canned texture, blanch beans in boiling water for 60 seconds and immediately plunge into an ice bath; otherwise, keep raw for maximum crispness.
- Combine white distilled vinegar, water, cane sugar, and pickling salt in a saucepan and bring to a rolling boil over medium-high heat, stirring until dissolved.
- Reduce heat to low and stir in mustard seeds, coriander, dill seed, red pepper flakes, and peppercorns; simmer for 2 minutes.
- Distribute the smashed garlic cloves, sliced ginger, and jalapeño rounds evenly among four pint-sized Mason jars.
- Pack the green beans tightly into the jars, leaving approximately 1/2 inch of headspace.
- Carefully pour the hot brine over the beans until completely submerged, seal with lids, cool to room temperature, and refrigerate for 24 hours.
