Ingredients:
- 4 large ripe peaches (approx. 2 lbs / 900g), halved and pitted
- 2 tbsp canola oil
- 3 tbsp brown sugar, packed
- ½ tsp ground cinnamon
- 1 tbsp melted unsalted butter
- 1 cup vanilla ice cream or Greek yogurt
- 2 tbsp honey or maple syrup
- ¼ cup crushed amaretto cookies or toasted pecans
Instructions:
- Pat the peach halves completely dry with a paper towel and brush the cut side of each half generously with the canola oil.
- Preheat the grill to medium-high. Place the peaches cut-side down and grill for 3-4 minutes without moving them to ensure a deep sear.
- Flip the peaches over. While they are flesh-side up, sprinkle the cinnamon-brown sugar mixture evenly over the top and drizzle with melted butter. Grill for another 2 minutes until the sugar bubbles into a syrup.
- Remove from heat. Place two halves per plate, top with a scoop of ice cream, drizzle with honey, and scatter the cookie crumble over the top.
