Ingredients:
- 1 cup (125g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 1 tablespoon (15g) baking powder
- ½ teaspoon (2g) salt
- 1 cup (240ml) milk
- ¼ cup (60ml) sweet cream
- 1 large egg
- 2 tablespoons (30g) unsalted butter, melted
- 1 teaspoon (5ml) vanilla extract
Instructions:
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the milk, sweet cream, egg, melted butter, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients, and gently fold until just combined. Avoid overmixing; some lumps are okay.
- Heat a large non-stick skillet or griddle over medium heat. Lightly grease with butter.
- Using a ladle, pour the batter onto the skillet. Cook until bubbles form on the surface (about 2-3 minutes).
- Carefully flip and cook for another 2-3 minutes until golden brown and cooked through.
- Serve immediately with your favorite toppings.
