Ingredients:

  • 1 cup (125g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (15g) baking powder
  • ½ teaspoon (2g) salt
  • 1 cup (240ml) milk
  • ¼ cup (60ml) sweet cream
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 teaspoon (5ml) vanilla extract

Instructions:

  1. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk the milk, sweet cream, egg, melted butter, and vanilla until smooth.
  3. Pour the wet ingredients into the dry ingredients, and gently fold until just combined. Avoid overmixing; some lumps are okay.
  4. Heat a large non-stick skillet or griddle over medium heat. Lightly grease with butter.
  5. Using a ladle, pour the batter onto the skillet. Cook until bubbles form on the surface (about 2-3 minutes).
  6. Carefully flip and cook for another 2-3 minutes until golden brown and cooked through.
  7. Serve immediately with your favorite toppings.
