Ingredients:
- 1 ½ cups (192g) all-purpose flour, plus more for dusting the pan
- 1 ½ teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup (150g) granulated sugar
- ½ cup (113g) unsalted butter, melted and slightly cooled
- 2 large eggs
- ½ cup (120ml) buttermilk
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons poppy seeds
- 1 cup (120g) powdered sugar
- 2-3 tablespoons lemon juice, or more to reach desired consistency
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In the same bowl, add sugar, melted butter, eggs, buttermilk, lemon juice, lemon zest, and poppy seeds. Mix until just combined – do not overmix!
- Pour batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before releasing it onto a wire rack to cool completely.
- In a small bowl, whisk together powdered sugar and lemon juice until smooth. Add more lemon juice, one tablespoon at a time, until desired consistency is reached.
- Drizzle glaze over the cooled cake.
