Ingredients:

  • 1 ½ cups (192g) all-purpose flour, plus more for dusting the pan
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • 2 large eggs
  • ½ cup (120ml) buttermilk
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds
  • 1 cup (120g) powdered sugar
  • 2-3 tablespoons lemon juice, or more to reach desired consistency

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In the same bowl, add sugar, melted butter, eggs, buttermilk, lemon juice, lemon zest, and poppy seeds. Mix until just combined – do not overmix!
  4. Pour batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the cake cool in the pan for 10 minutes before releasing it onto a wire rack to cool completely.
  6. In a small bowl, whisk together powdered sugar and lemon juice until smooth. Add more lemon juice, one tablespoon at a time, until desired consistency is reached.
  7. Drizzle glaze over the cooled cake.
  8. Slice and serve this easy spring desserts.
