Ingredients:
- 2 cups cubed watermelon (about 1/4 of a small watermelon), (475ml)
- 1 cup cubed cantaloupe (about 1/4 of a medium cantaloupe),(235ml)
- 1 cup halved strawberries (about 1 pint),(235ml)
- 1 cup blueberries (about 1/2 pint),(235ml)
- 1 large mango, peeled, pitted, and cubed
- 1/4 cup fresh mint leaves, chopped (60ml)
- 2 tablespoons fresh lime juice (about 1 lime),(30ml)
- 1 tablespoon honey or maple syrup,(15ml)
- 1/2 teaspoon lime zest
- Pinch of sea salt
Instructions:
- Wash all fruit thoroughly. Prepare and cube the watermelon, cantaloupe, mango and strawberries.
- In a large mixing bowl, gently combine the watermelon, cantaloupe, strawberries, blueberries, and mango.
- In a small bowl, whisk together the lime juice, honey/maple syrup, lime zest, and salt until well combined.
- Pour the dressing over the fruit and gently toss to coat evenly.
- Sprinkle the chopped mint leaves over the fruit salad.
- For best flavor, cover the salad and refrigerate for at least 15 minutes to allow the flavors to meld (optional).
- Serve chilled and enjoy!
