Ingredients:

  • 2 cups cubed watermelon (about 1/4 of a small watermelon), (475ml)
  • 1 cup cubed cantaloupe (about 1/4 of a medium cantaloupe),(235ml)
  • 1 cup halved strawberries (about 1 pint),(235ml)
  • 1 cup blueberries (about 1/2 pint),(235ml)
  • 1 large mango, peeled, pitted, and cubed
  • 1/4 cup fresh mint leaves, chopped (60ml)
  • 2 tablespoons fresh lime juice (about 1 lime),(30ml)
  • 1 tablespoon honey or maple syrup,(15ml)
  • 1/2 teaspoon lime zest
  • Pinch of sea salt

Instructions:

  1. Wash all fruit thoroughly. Prepare and cube the watermelon, cantaloupe, mango and strawberries.
  2. In a large mixing bowl, gently combine the watermelon, cantaloupe, strawberries, blueberries, and mango.
  3. In a small bowl, whisk together the lime juice, honey/maple syrup, lime zest, and salt until well combined.
  4. Pour the dressing over the fruit and gently toss to coat evenly.
  5. Sprinkle the chopped mint leaves over the fruit salad.
  6. For best flavor, cover the salad and refrigerate for at least 15 minutes to allow the flavors to meld (optional).
  7. Serve chilled and enjoy!
