Ingredients:

  • 6 large eggs (about 300g)
  • 1 cup (120g) cooked breakfast sausage, crumbled (or a vegetarian substitute)
  • 1/2 cup (75g) bell peppers, diced (any color)
  • 1/4 cup (40g) red onion, diced
  • 1/2 cup (60g) shredded cheddar cheese
  • 2 tablespoons (30ml) milk (or a dairy-free alternative)
  • Salt and pepper to taste
  • 4 large flour tortillas (about 10 inches each)
  • Fresh cilantro, chopped (optional)
  • Salsa or hot sauce (optional)

Instructions:

  1. Chop bell peppers and onions. Crumble cooked sausage if not pre-crumbled.
  2. In a frying pan, sauté onions and bell peppers over medium heat until softened (about 3-4 minutes). Add sausage; cook until heated through (2 minutes).
  3. In a mixing bowl, whisk eggs and milk together, seasoning with salt and pepper. Pour the egg mixture into the pan; cook gently, stirring until just set (3-5 minutes).
  4. Lay a tortilla flat; spoon 1/4 filling mixture onto the center and sprinkle with cheese. Fold in the sides of the tortilla, then roll from the bottom up to form a burrito.
  5. Place wrapped burritos seam-side down in the pan for 1-2 minutes to crisp slightly (optional).
  6. Slice in half, garnish with cilantro, and serve with salsa on the side.
