Ingredients:

  • 2 cups (300g) Watermelon, cubed
  • 2 cups (300g) Honeydew Melon, cubed
  • 1 cup (150g) Strawberries, hulled and halved or quartered
  • 1 cup (150g) Blueberries
  • 1 cup (150g) Green Grapes, halved
  • 2 Kiwi Fruits, peeled and sliced
  • 1 Mango, peeled and diced
  • 2 tablespoons (30ml) Fresh Lime Juice
  • 1 tablespoon (15ml) Honey or Maple Syrup
  • 1/2 teaspoon Vanilla Extract
  • Pinch of Sea Salt
  • Fresh Mint Leaves, chopped (optional)
  • Toasted Coconut Flakes (optional)
  • Poppy Seeds (optional)

Instructions:

  1. Wash all fruit thoroughly. Chop, dice, and slice according to the ingredient list.
  2. Gently combine all the prepared fruits in the large mixing bowl.
  3. In a small bowl, whisk together the lime juice, honey (or maple syrup), vanilla extract, and sea salt until well combined. Taste and adjust sweetness as needed.
  4. Pour the dressing over the fruit salad and gently toss to coat evenly. Be careful not to over-mix and bruise the fruit.
  5. For a cooler, more refreshing salad, cover the bowl and chill in the refrigerator for at least 30 minutes before serving (optional).
