Ingredients:
- 2 cups (300g) Watermelon, cubed
- 2 cups (300g) Honeydew Melon, cubed
- 1 cup (150g) Strawberries, hulled and halved or quartered
- 1 cup (150g) Blueberries
- 1 cup (150g) Green Grapes, halved
- 2 Kiwi Fruits, peeled and sliced
- 1 Mango, peeled and diced
- 2 tablespoons (30ml) Fresh Lime Juice
- 1 tablespoon (15ml) Honey or Maple Syrup
- 1/2 teaspoon Vanilla Extract
- Pinch of Sea Salt
- Fresh Mint Leaves, chopped (optional)
- Toasted Coconut Flakes (optional)
- Poppy Seeds (optional)
Instructions:
- Wash all fruit thoroughly. Chop, dice, and slice according to the ingredient list.
- Gently combine all the prepared fruits in the large mixing bowl.
- In a small bowl, whisk together the lime juice, honey (or maple syrup), vanilla extract, and sea salt until well combined. Taste and adjust sweetness as needed.
- Pour the dressing over the fruit salad and gently toss to coat evenly. Be careful not to over-mix and bruise the fruit.
- For a cooler, more refreshing salad, cover the bowl and chill in the refrigerator for at least 30 minutes before serving (optional).
