Ingredients:

  • 4 ripe peaches, pitted and sliced (about 600g)
  • 1 pint fresh blueberries (about 250g)
  • 1 cup fresh raspberries (about 125g)
  • 2 nectarines, pitted and sliced (about 300g)
  • 1/2 cup red grapes, halved (about 75g)
  • 1/4 cup fresh mint leaves, finely chopped (about 10g)
  • 1/2 cup honeycomb candy, crumbled (about 50g)
  • 2 tablespoons fresh lime juice (about 30ml)
  • 1 tablespoon honey (about 15ml)
  • 1/2 teaspoon lime zest
  • Pinch of salt

Instructions:

  1. Prepare the Dressing: In a small bowl, whisk together the lime juice, honey, lime zest, and salt until well combined. Set aside.
  2. Prepare the Fruit: Gently wash and dry all the fruit. Pit and slice the peaches and nectarines. Halve the grapes. Chop the mint.
  3. Combine the Salad: In a large mixing bowl, combine the sliced peaches, nectarines, blueberries, raspberries, and grapes.
  4. Dress the Salad: Pour the honey-lime dressing over the fruit and gently toss to coat. Be careful not to bruise the fruit.
  5. Chill and Serve: Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld. Before serving, gently toss again and sprinkle with chopped mint and crumbled honeycomb candy (if using).
