  • 4 cups (approximately 600g) fresh strawberries, hulled and halved or quartered if large
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (15g) cornstarch/cornflour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup (120g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) milk (any kind)
  • 4 tablespoons (57g) unsalted butter, melted
  • 2 tablespoons granulated sugar, for sprinkling (optional)

Instructions:

  1. In a large bowl, gently toss the strawberries with sugar, cornstarch, lemon juice, vanilla extract, and salt. Ensure strawberries are evenly coated.
  2. Pour the strawberry mixture into the prepared baking dish, spreading evenly.
  3. In a small bowl, whisk together flour, sugar, baking powder, and salt.
  4. Pour in the milk and melted butter. Stir until just combined. Do not overmix.
  5. Drop spoonfuls of the cobbler topping evenly over the strawberry filling.
  6. Sprinkle the top of the cobbler with additional sugar for extra sparkle and crunch (optional).
  7. Bake in a preheated oven at 375°F (190°C) for 30 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the cobbler cool slightly before serving.
