- 4 cups (approximately 600g) fresh strawberries, hulled and halved or quartered if large

- 2 tablespoons (15g) cornstarch/cornflour
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1 cup (120g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (120ml) milk (any kind)
- 4 tablespoons (57g) unsalted butter, melted
- 2 tablespoons granulated sugar, for sprinkling (optional)
Instructions:
- In a large bowl, gently toss the strawberries with sugar, cornstarch, lemon juice, vanilla extract, and salt. Ensure strawberries are evenly coated.
- Pour the strawberry mixture into the prepared baking dish, spreading evenly.
- In a small bowl, whisk together flour, sugar, baking powder, and salt.
- Pour in the milk and melted butter. Stir until just combined. Do not overmix.
- Drop spoonfuls of the cobbler topping evenly over the strawberry filling.
- Sprinkle the top of the cobbler with additional sugar for extra sparkle and crunch (optional).
- Bake in a preheated oven at 375°F (190°C) for 30 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the cobbler cool slightly before serving.
