Instructions:
- Prepare the Puree Base: Combine strawberries, lime juice, simple syrup, and salt (if using) in a blender.
- Blend Until Smooth: Process until the mixture is completely smooth and liquid.
- Strain (Optional): For a pristine, seed-free texture, push the puree through a fine-mesh sieve using the back of a spoon. Discard solids.
- Chill: Transfer puree to an airtight container and chill thoroughly for at least 30 minutes.
- Prepare Glasses: Place 1 to 1.5 ounces (2-3 Tablespoons) of the chilled strawberry puree into the bottom of each chilled champagne flute.
- The Fizz Factor: Slowly top each flute with the chilled sparkling wine, pouring down the side of the glass to preserve the bubbles.
- Adjust & Top (If Needed): If the mixture seems too intense, top with a splash of chilled club soda. Stir gently once with a stirrer.
- Garnish and Serve: Garnish immediately with a fresh strawberry slice on the rim and a small mint sprig.
