Ingredients:

  • 2 cans (800g) strawberry pie filling
  • 1 cup (150g) fresh strawberries, sliced
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 box (432g) yellow cake mix
  • 1/2 cup (113g) unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C). Spread the strawberry pie filling evenly across the bottom of a 9x13 inch baking dish. If using fresh strawberries, gently press them into the filling to ensure they are fully submerged.
  2. In a medium bowl, beat the softened cream cheese, sugar, egg, and vanilla with an electric mixer until the mixture is completely smooth and aerated. Spoon this mixture over the strawberry layer, using a spatula to spread it into an even blanket.
  3. Dump the dry yellow cake mix evenly over the cheesecake layer. Drizzle the melted butter across the top of the cake mix, ensuring most of the powder is moistened.
  4. Bake for 40–45 minutes until the top is a deep mahogany-gold and the edges are bubbling.
