Ingredients:

  • 2 cups all-purpose flour (240g)
  • ½ cup boiling water (120ml)
  • ½ teaspoon salt
  • 8 oz skinless chicken breast, finely chopped (225g)
  • 4 oz peeled and deveined prawns, finely chopped (115g)
  • 3 green onions, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • ½ teaspoon black pepper
  • Soy sauce (optional for dipping)
  • Fresh cilantro (for garnish)

Instructions:

  1. Combine flour and salt in a mixing bowl.
  2. Gradually stir in boiling water until a shaggy dough forms.
  3. Knead the dough on a lightly floured surface for 5 minutes until smooth.
  4. Cover with a damp cloth and let rest for 10 minutes.
  5. In a separate bowl, mix together chicken, prawns, green onions, soy sauce, sesame oil, ginger, garlic, and black pepper until well combined.
  6. Chill the filling in the fridge for 10 minutes.
  7. Roll the rested dough into a log and cut into 24 equal pieces.
  8. Flatten each piece into a small circle (about 3 inches in diameter).
  9. Place a teaspoon of filling in the center of each circle.
  10. Fold and pinch the edges to seal the dumplings.
  11. Prepare the steamer over boiling water.
  12. Arrange the dumplings in the steamer basket
  13. Cover and steam for about 15 minutes or until the chicken is cooked through.
  14. Transfer dumplings to a serving plate.
  15. Garnish with cilantro and serve with soy sauce for dipping.
