Ingredients:
- 2 cups all-purpose flour (240g)
- ½ cup boiling water (120ml)
- ½ teaspoon salt
- 8 oz skinless chicken breast, finely chopped (225g)
- 4 oz peeled and deveined prawns, finely chopped (115g)
- 3 green onions, thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- ½ teaspoon black pepper
- Soy sauce (optional for dipping)
- Fresh cilantro (for garnish)
Instructions:
- Combine flour and salt in a mixing bowl.
- Gradually stir in boiling water until a shaggy dough forms.
- Knead the dough on a lightly floured surface for 5 minutes until smooth.
- Cover with a damp cloth and let rest for 10 minutes.
- In a separate bowl, mix together chicken, prawns, green onions, soy sauce, sesame oil, ginger, garlic, and black pepper until well combined.
- Chill the filling in the fridge for 10 minutes.
- Roll the rested dough into a log and cut into 24 equal pieces.
- Flatten each piece into a small circle (about 3 inches in diameter).
- Place a teaspoon of filling in the center of each circle.
- Fold and pinch the edges to seal the dumplings.
- Prepare the steamer over boiling water.
- Arrange the dumplings in the steamer basket
- Cover and steam for about 15 minutes or until the chicken is cooked through.
- Transfer dumplings to a serving plate.
- Garnish with cilantro and serve with soy sauce for dipping.
