Ingredients:
- 1 pound (450 g) chicken breast, cut into 1-inch cubes
- 2 tablespoons Hello Fresh Tuscan Heat Spice
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste
- 1 medium zucchini, sliced into half-moons
- 1 bell pepper, cut into 1-inch squares
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
- Combine chicken cubes, Tuscan Heat Spice, olive oil, lemon juice, salt, and pepper in a bowl. Let marinate for at least 10 minutes.
- While chicken is marinating, preheat the oven to 425°F (220°C). Toss zucchini, bell pepper, onion, and cherry tomatoes with olive oil, salt, and pepper.
- Thread marinated chicken and vegetables onto skewers, alternating between meat and vegetables.
- Spread the prepared vegetables on a baking sheet and roast in the oven for 20-25 minutes, stirring halfway through.
- Grill skewers over medium heat for 10-15 minutes, turning occasionally, until chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Plate the skewers with the roasted vegetables. Enjoy!
