Ingredients:

  • 1 pound (450 g) chicken breast, cut into 1-inch cubes
  • 2 tablespoons Hello Fresh Tuscan Heat Spice
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • 1 medium zucchini, sliced into half-moons
  • 1 bell pepper, cut into 1-inch squares
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

  1. Combine chicken cubes, Tuscan Heat Spice, olive oil, lemon juice, salt, and pepper in a bowl. Let marinate for at least 10 minutes.
  2. While chicken is marinating, preheat the oven to 425°F (220°C). Toss zucchini, bell pepper, onion, and cherry tomatoes with olive oil, salt, and pepper.
  3. Thread marinated chicken and vegetables onto skewers, alternating between meat and vegetables.
  4. Spread the prepared vegetables on a baking sheet and roast in the oven for 20-25 minutes, stirring halfway through.
  5. Grill skewers over medium heat for 10-15 minutes, turning occasionally, until chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Plate the skewers with the roasted vegetables. Enjoy!
