Ingredients:
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- ½ cup unsulfured molasses
- ¼ cup granulated sugar
Instructions:
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a separate bowl, beat softened butter and brown sugar until light and fluffy.
- Mix in the egg and molasses until well combined.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Cover and refrigerate the dough for at least 30 minutes.
- Preheat oven to 350°F (175°C).
- Shape tablespoon-sized balls of dough, roll in granulated sugar, and place on a lined baking sheet.
- Bake for 10-12 minutes until edges are set and centers are soft.
- Remove from oven, let sit for 5 minutes on baking sheet, then transfer to a cooling rack.
