Ingredients:

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • ½ cup unsulfured molasses
  • ¼ cup granulated sugar

Instructions:

  1. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. In a separate bowl, beat softened butter and brown sugar until light and fluffy.
  3. Mix in the egg and molasses until well combined.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  5. Cover and refrigerate the dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C).
  7. Shape tablespoon-sized balls of dough, roll in granulated sugar, and place on a lined baking sheet.
  8. Bake for 10-12 minutes until edges are set and centers are soft.
  9. Remove from oven, let sit for 5 minutes on baking sheet, then transfer to a cooling rack.
