Ingredients:
- 1 medium ripe pineapple, peeled and diced (about 4 cups)
- 2-4 habanero peppers, stems removed and chopped (adjust based on heat preference)
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup (60 ml) apple cider vinegar
- 1/4 cup (50 g) brown sugar
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (2 g) black pepper
- Juice of 1 lime (about 2 tablespoons, 30 ml)
Instructions:
- Dice the pineapple, chop habanero peppers, and finely chop the onion and garlic.
- In a medium saucepan, combine onion and garlic over medium heat. Sauté until softened, about 3-5 minutes.
- Stir in diced pineapple, habanero peppers, apple cider vinegar, brown sugar, salt, and pepper.
- Bring the mixture to a gentle simmer. Cook for about 10-15 minutes until the pineapple is tender and the flavors meld. Stir occasionally.
- Carefully transfer the mixture to a blender or food processor. Blend until smooth, adjusting consistency with additional vinegar or water if needed.
- Taste and adjust seasoning, adding lime juice for brightness. Let the sauce cool at room temperature before transferring to a container.
- Chill for at least 30 minutes before serving to enhance flavors.
