Ingredients:

  • 1 medium ripe pineapple, peeled and diced (about 4 cups)
  • 2-4 habanero peppers, stems removed and chopped (adjust based on heat preference)
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) apple cider vinegar
  • 1/4 cup (50 g) brown sugar
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (2 g) black pepper
  • Juice of 1 lime (about 2 tablespoons, 30 ml)

Instructions:

  1. Dice the pineapple, chop habanero peppers, and finely chop the onion and garlic.
  2. In a medium saucepan, combine onion and garlic over medium heat. Sauté until softened, about 3-5 minutes.
  3. Stir in diced pineapple, habanero peppers, apple cider vinegar, brown sugar, salt, and pepper.
  4. Bring the mixture to a gentle simmer. Cook for about 10-15 minutes until the pineapple is tender and the flavors meld. Stir occasionally.
  5. Carefully transfer the mixture to a blender or food processor. Blend until smooth, adjusting consistency with additional vinegar or water if needed.
  6. Taste and adjust seasoning, adding lime juice for brightness. Let the sauce cool at room temperature before transferring to a container.
  7. Chill for at least 30 minutes before serving to enhance flavors.
