Ingredients:
- 2 cups (300g) finely diced cabbage
- 1 cup (150g) finely diced white onion
- 1 cup (150g) finely diced green bell pepper
- ½ cup (75g) finely diced red bell pepper
- 3 medium (150g) jalapeños, seeded and minced
- 2 tbsp (30g) salt
- ¾ cup (180ml) apple cider vinegar
- ⅓ cup (65g) light brown sugar, packed
- 1 tsp (5g) celery seed
- 1 tsp (5g) mustard seed
- ½ tsp (2.5g) crushed red pepper flakes
- ½ tsp (3g) smoked paprika
- 1 tbsp (15ml) apple cider vinegar
- ½ tsp (3g) salt
Instructions:
- Combine the diced cabbage, onion, and bell peppers in a large bowl.
- Sprinkle the vegetables with 2 tablespoons of salt, toss thoroughly, and let sit for 30 minutes to draw out excess moisture.
- Pour the mixture into a colander, rinse thoroughly under cold water to remove excess salt, and pat dry with a towel.
- In a saucepan over medium heat, combine the ¾ cup apple cider vinegar, brown sugar, celery seed, mustard seed, red pepper flakes, and smoked paprika.
- Stir constantly until the sugar has completely dissolved and the liquid begins to simmer.
- Add the rinsed vegetable mixture and minced jalapeños to the saucepan.
- Lower the heat to a simmer and cook uncovered for 20–25 minutes, stirring occasionally, until the liquid has reduced by half and vegetables are translucent.
- Remove from heat and stir in the remaining 1 tablespoon of apple cider vinegar and additional salt to taste.
- Transfer to sterile glass mason jars and chill for 4 hours before serving to allow flavors to develop.
