Ingredients:

  • 3 lbs Persian or Kirby cucumbers, sliced into 1/4 inch rounds
  • 3 tbsp Kosher salt
  • 2 cups apple cider vinegar
  • 1 cup white granulated sugar
  • 1 cup water
  • 1 tbsp mustard seeds
  • 1 tsp celery seeds
  • 1 tsp turmeric powder
  • 1 tsp red pepper flakes
  • 1/2 tsp ground cloves
  • 1 medium white onion, thinly sliced
  • 4 cloves garlic, smashed and minced

Instructions:

  1. Combine sliced cucumbers and Kosher salt in a large bowl. Toss thoroughly and let them sit for 1 hour to draw out excess moisture. Pour the cucumbers into a colander, rinse under cold water to remove excess salt, and pat dry with a towel.
  2. In a saucepan, combine apple cider vinegar, sugar, water, mustard seeds, celery seeds, turmeric, red pepper flakes, and cloves. Bring to a simmer over medium heat, stirring occasionally until the sugar is dissolved. Remove from heat immediately.
  3. Divide the sliced onions and minced garlic evenly among 4 mason jars. Pack the rinsed cucumbers tightly into the jars on top of the aromatics.
  4. Pour the hot brine over the cucumbers until completely submerged. Seal the lids tightly, cool to room temperature on the counter, and then refrigerate for 24 hours.
