Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into strips
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning (store-bought or homemade)
  • 1 lime, juiced
  • Fresh cilantro, chopped (for garnish)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 12 flour or corn tortillas, warmed
  • Sour cream, salsa, guacamole, shredded cheese, chopped tomatoes, lettuce (toppings of your choice)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Slice the chicken breasts, bell peppers, and onion into strips.
  3. Combine all fajita seasoning ingredients in a small bowl (if making your own).
  4. In a large bowl, toss the chicken, bell peppers, and onion with olive oil, fajita seasoning, and lime juice. Ensure everything is evenly coated.
  5. Spread the mixture evenly on the prepared baking sheet in a single layer. Avoid overcrowding.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp. The chicken should reach an internal temperature of 165°F (74°C).
  7. Warm the tortillas. Serve the chicken fajita mixture in warm tortillas with your favorite toppings. Garnish with fresh cilantro.
