- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into strips
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 2 tbsp fajita seasoning (store-bought or homemade)
- 1 lime, juiced
- Fresh cilantro, chopped (for garnish)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp dried oregano
- 1/4 tsp cayenne pepper (optional, for heat)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 12 flour or corn tortillas, warmed
- Sour cream, salsa, guacamole, shredded cheese, chopped tomatoes, lettuce (toppings of your choice)
Instructions:
- Preheat oven to 400°F (200°C).
- Slice the chicken breasts, bell peppers, and onion into strips.
- Combine all fajita seasoning ingredients in a small bowl (if making your own).
- In a large bowl, toss the chicken, bell peppers, and onion with olive oil, fajita seasoning, and lime juice. Ensure everything is evenly coated.
- Spread the mixture evenly on the prepared baking sheet in a single layer. Avoid overcrowding.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp. The chicken should reach an internal temperature of 165°F (74°C).
- Warm the tortillas. Serve the chicken fajita mixture in warm tortillas with your favorite toppings. Garnish with fresh cilantro.
