Ingredients:
- 2 oz (60 ml) Gin (London Dry style recommended)
- 1 oz (30 ml) Fresh Lemon Juice
- 0.75 oz (22 ml) Raspberry Syrup (recipe follows or store-bought)
- 3-4 Fresh Raspberries (plus extra for garnish)
- 4 oz (120 ml) Chilled Sparkling Wine (Prosecco, Cava, or Champagne)
- Ice cubes
- 1 cup (200g) Fresh or Frozen Raspberries (for syrup)
- 1 cup (200g) Granulated Sugar (for syrup)
- 0.5 cup (120ml) Water (for syrup)
Instructions:
- Make the Raspberry Syrup (if using homemade): Combine raspberries, sugar, and water in a saucepan. Bring to a simmer, stirring until sugar dissolves. Simmer for 5 minutes. Strain through a fine-mesh sieve, pressing on the solids to extract as much syrup as possible. Let cool completely.
- Muddle (Optional): Gently muddle 3-4 fresh raspberries in the bottom of the cocktail shaker.
- Combine Ingredients: Add gin, lemon juice, and raspberry syrup (store-bought or homemade) to the shaker.
- Add Ice: Fill the shaker with ice cubes.
- Shake Vigorously: Secure the lid and shake well for 15-20 seconds, until well-chilled.
- Strain and Top: Strain the mixture into your chilled glass. Top with chilled sparkling wine.
- Garnish: Garnish with a few fresh raspberries.
- Serve Immediately: Ta-dah! Time to enjoy.
