Ingredients:

  • 2 oz (60 ml) Gin (London Dry style recommended)
  • 1 oz (30 ml) Fresh Lemon Juice
  • 0.75 oz (22 ml) Raspberry Syrup (recipe follows or store-bought)
  • 3-4 Fresh Raspberries (plus extra for garnish)
  • 4 oz (120 ml) Chilled Sparkling Wine (Prosecco, Cava, or Champagne)
  • Ice cubes
  • 1 cup (200g) Fresh or Frozen Raspberries (for syrup)
  • 1 cup (200g) Granulated Sugar (for syrup)
  • 0.5 cup (120ml) Water (for syrup)

Instructions:

  1. Make the Raspberry Syrup (if using homemade): Combine raspberries, sugar, and water in a saucepan. Bring to a simmer, stirring until sugar dissolves. Simmer for 5 minutes. Strain through a fine-mesh sieve, pressing on the solids to extract as much syrup as possible. Let cool completely.
  2. Muddle (Optional): Gently muddle 3-4 fresh raspberries in the bottom of the cocktail shaker.
  3. Combine Ingredients: Add gin, lemon juice, and raspberry syrup (store-bought or homemade) to the shaker.
  4. Add Ice: Fill the shaker with ice cubes.
  5. Shake Vigorously: Secure the lid and shake well for 15-20 seconds, until well-chilled.
  6. Strain and Top: Strain the mixture into your chilled glass. Top with chilled sparkling wine.
  7. Garnish: Garnish with a few fresh raspberries.
  8. Serve Immediately: Ta-dah! Time to enjoy.
