  • 1 medium spaghetti squash (approximately 2-3 pounds / 900g - 1.4kg)
  • 1 tablespoon olive oil (or avocado oil) (15ml)
  • ½ teaspoon salt (2.5ml)

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  4. Drizzle the cut sides of the squash with olive oil. Sprinkle with salt and pepper.
  5. Place the squash cut-side down on the prepared baking sheet. Roast for 45-60 minutes, or until the squash is easily pierced with a fork and the flesh is tender.
  6. Remove the squash from the oven and let it cool slightly. Use a fork to scrape the flesh into strands, resembling spaghetti.
