Ingredients:
- 1 medium spaghetti squash (approximately 2-3 pounds / 900g - 1.4kg)
- 1 tablespoon olive oil (or avocado oil) (15ml)
- ½ teaspoon salt (2.5ml)
- ¼ teaspoon black pepper (1.25ml)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Carefully cut the spaghetti squash in half lengthwise. If it’s being stubborn, microwave it for 2-3 minutes to soften the skin slightly.
- Scoop out the seeds and stringy bits from the center of each half.
- Drizzle the cut sides of the squash with olive oil. Sprinkle with salt and pepper.
- Place the squash cut-side down on the prepared baking sheet. Roast for 45-60 minutes, or until the squash is easily pierced with a fork and the flesh is tender.
- Remove the squash from the oven and let it cool slightly. Use a fork to scrape the flesh into strands, resembling spaghetti.
- Toss the strands with your favorite sauce or toppings and enjoy! This is how to make spaghetti squash the easy way.
