Ingredients:

  • 9 cups (Approx. 2200 mL) Chex Cereal (Rice or Corn Chex are preferred for texture)
  • 1 cup (170 g) High-Quality White Chocolate Chips or Chopped Bar
  • 1/4 cup (57 g) Unsalted Butter, cut into small cubes
  • 1 teaspoon (5 mL) Pure Vanilla Extract
  • 1 1/2 cups (180 g) Powdered Sugar (Icing Sugar), sifted
  • 1/4 cup (50 g) Granulated Sugar (Fine-grain preferred)
  • 2 Tablespoons (30 mL) Ground Cinnamon
  • 1/2 teaspoon (2.5 mL) Cream of Tartar
  • Pinch of Fine Sea Salt

Instructions:

  1. Measure Cereal: Place the 9 cups of Chex cereal into the very large mixing bowl. Set aside.
  2. Prepare the Dusting Mix: In a medium bowl, whisk together the powdered sugar, granulated sugar, cinnamon, cream of tartar, and salt until fully combined and lump-free. Set aside.
  3. Melt Butter and Chocolate: Combine the white chocolate chips and butter in the microwave-safe bowl. Microwave in 30-second intervals, stirring vigorously after each, until the mixture is smooth and fully melted. Stop microwaving just before it is fully melted and stir to finish with residual heat to prevent scorching.
  4. Add Vanilla: Stir the vanilla extract into the melted mixture.
  5. Coat the Cereal: Pour the white chocolate mixture evenly over the measured cereal in the large bowl. Using a large rubber spatula, gently fold and stir the mixture until the cereal is evenly coated. Work quickly but carefully to avoid crushing the cereal.
  6. Divide and Dust: Divide the coated cereal equally between two large resealable bags.
  7. Add Powder: Pour half of the prepared Snickerdoodle Dusting mix into each bag.
  8. Shake Vigorously: Seal the bags tightly, ensuring there is plenty of air inside. Gently shake and tumble the bags until the cereal pieces are completely coated in the sugar mixture. Shake vigorously to ensure the powder adheres fully.
  9. Set and Cool: Spread the coated Muddy Buddies in a single layer onto a baking sheet lined with parchment paper or onto a wire cooling rack. Allow to cool completely (about 30 minutes) until the coating has hardened.
  10. Serve or Store: Once set, break up any large clumps and serve immediately, or store in an airtight container.
