Ingredients:

  • 1 large head of cauliflower (about 2 lbs / 900 g), trimmed and sliced into 3/4-inch (2 cm) thick steaks
  • 3 tbsp olive oil (45 ml)
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp chili flakes (optional, adjust to taste)
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon (about 2 tbsp / 30 ml)
  • 2 tbsp fresh parsley, chopped (optional)
  • 2 tbsp toasted pine nuts or chopped walnuts (optional)

Instructions:

  1. Remove green leaves and trim the cauliflower base. Slice the cauliflower lengthwise into 3/4-inch thick steaks.
  2. In a bowl, whisk together olive oil, smoked paprika, ground cumin, garlic powder, chili flakes, salt, and black pepper.
  3. Brush or toss cauliflower steaks with the spiced oil marinade to coat evenly. Let rest for 5-10 minutes.
  4. Preheat the grill or grill pan over medium-high heat until hot.
  5. Place the cauliflower steaks on the grill. Cook 6-8 minutes per side until golden brown and tender, flipping carefully.
  6. Squeeze fresh lemon juice over the grilled cauliflower steaks for brightness.
  7. Sprinkle with chopped parsley and toasted pine nuts or walnuts if desired. Serve immediately.
