Ingredients:
- 1 large head of cauliflower (about 2 lbs / 900 g), trimmed and sliced into 3/4-inch (2 cm) thick steaks
- 3 tbsp olive oil (45 ml)
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/4 tsp chili flakes (optional, adjust to taste)
- Salt and freshly ground black pepper, to taste
- Juice of 1 lemon (about 2 tbsp / 30 ml)
- 2 tbsp fresh parsley, chopped (optional)
- 2 tbsp toasted pine nuts or chopped walnuts (optional)
Instructions:
- Remove green leaves and trim the cauliflower base. Slice the cauliflower lengthwise into 3/4-inch thick steaks.
- In a bowl, whisk together olive oil, smoked paprika, ground cumin, garlic powder, chili flakes, salt, and black pepper.
- Brush or toss cauliflower steaks with the spiced oil marinade to coat evenly. Let rest for 5-10 minutes.
- Preheat the grill or grill pan over medium-high heat until hot.
- Place the cauliflower steaks on the grill. Cook 6-8 minutes per side until golden brown and tender, flipping carefully.
- Squeeze fresh lemon juice over the grilled cauliflower steaks for brightness.
- Sprinkle with chopped parsley and toasted pine nuts or walnuts if desired. Serve immediately.
