Ingredients:

  • 1 pound (450g) ground beef (80% lean)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon black pepper
  • 1 can (15 ounces) chopped tomatoes (or 2 cups fresh, diced)
  • 1 cup (150g) corn (frozen or fresh)
  • Fresh cilantro or parsley, chopped (optional)
  • Shredded cheese (optional)
  • Sour cream (optional)

Instructions:

  1. Dice onion, garlic, bell pepper, and tomatoes.
  2. Preheat the skillet over medium heat and add a drizzle of oil if using leaner beef.
  3. Add ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned (about 5-7 minutes).
  4. Stir in diced onions, garlic, and bell pepper. Sauté until softened (about 3-4 minutes).
  5. Sprinkle in cumin, smoked paprika, salt, and pepper; stir to combine.
  6. Add chopped tomatoes and corn, simmer for 5 minutes until heated through.
  7. Taste and adjust seasoning as needed.
  8. Plate and garnish with fresh herbs, cheese, and sour cream if desired.
