- 1 pound (450g) ground beef (80% lean)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper (red or green), diced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon salt (to taste)
- ¼ teaspoon black pepper
- 1 can (15 ounces) chopped tomatoes (or 2 cups fresh, diced)
- 1 cup (150g) corn (frozen or fresh)
- Fresh cilantro or parsley, chopped (optional)
- Shredded cheese (optional)
- Sour cream (optional)
Instructions:
- Dice onion, garlic, bell pepper, and tomatoes.
- Preheat the skillet over medium heat and add a drizzle of oil if using leaner beef.
- Add ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned (about 5-7 minutes).
- Stir in diced onions, garlic, and bell pepper. Sauté until softened (about 3-4 minutes).
- Sprinkle in cumin, smoked paprika, salt, and pepper; stir to combine.
- Add chopped tomatoes and corn, simmer for 5 minutes until heated through.
- Taste and adjust seasoning as needed.
- Plate and garnish with fresh herbs, cheese, and sour cream if desired.
