Ingredients:

  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar for sprinkling

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. In a separate bowl, whisk together flour and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  7. Roll out the dough on a floured surface to about 1/4-inch thick. Cut into desired shapes using a cookie cutter or knife.
  8. Place the cookies on a prepared baking sheet lined with parchment. Bake for 15-20 minutes or until just lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
