Ingredients:

  • 1 pound fresh green beans, trimmed
  • 4 tablespoons unsalted butter
  • 1/4 cup slivered almonds
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • Optional: Pinch of freshly grated nutmeg

Instructions:

  1. Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes, until bright green and slightly tender-crisp.
  2. Immediately transfer the blanched green beans to a colander and rinse with cold water to stop the cooking process. Drain well.
  3. In a dry skillet over medium heat, toast the slivered almonds until golden brown and fragrant, about 3-5 minutes. Watch carefully to prevent burning! Remove from skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma (about 3-5 minutes). Be careful not to burn the butter.
  5. Add the blanched green beans to the browned butter in the skillet. Sauté for 2-3 minutes, stirring occasionally, until heated through.
  6. Stir in the lemon juice and toasted almonds. Season with salt and pepper to taste. Add a pinch of nutmeg, if desired. Serve immediately.
