Ingredients:
- 1 pound fresh green beans, trimmed
- 4 tablespoons unsalted butter
- 1/4 cup slivered almonds
- 1 tablespoon fresh lemon juice
- Salt and freshly ground black pepper to taste
- Optional: Pinch of freshly grated nutmeg
Instructions:
- Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes, until bright green and slightly tender-crisp.
- Immediately transfer the blanched green beans to a colander and rinse with cold water to stop the cooking process. Drain well.
- In a dry skillet over medium heat, toast the slivered almonds until golden brown and fragrant, about 3-5 minutes. Watch carefully to prevent burning! Remove from skillet and set aside.
- In the same skillet, melt the butter over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma (about 3-5 minutes). Be careful not to burn the butter.
- Add the blanched green beans to the browned butter in the skillet. Sauté for 2-3 minutes, stirring occasionally, until heated through.
- Stir in the lemon juice and toasted almonds. Season with salt and pepper to taste. Add a pinch of nutmeg, if desired. Serve immediately.
