Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) baking powder
  • ½ tsp (3g) salt
  • 1 tbsp (8g) ground cinnamon
  • ¼ tsp (1g) ground nutmeg
  • ½ cup (115g) vegetable oil
  • 1 cup (200g) granulated white sugar
  • 2 large eggs
  • 1 tsp (5ml) pure vanilla extract
  • 2 cups (300g) shredded zucchini
  • ½ cup (60g) chopped walnuts
  • ½ cup (85g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or oil, or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until the color is uniform.
  3. In a separate bowl, beat the vegetable oil, sugar, eggs, and vanilla extract until the mixture is smooth and pale.
  4. Gently fold the dry ingredient mixture into the wet ingredients using a spatula until just combined.
  5. Stir in the shredded zucchini, chopped walnuts, and semi-sweet chocolate chips until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until the top is a deep mahogany brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
