Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) baking powder
- ½ tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- ¼ tsp (1g) ground nutmeg
- ½ cup (115g) vegetable oil
- 1 cup (200g) granulated white sugar
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 2 cups (300g) shredded zucchini
- ½ cup (60g) chopped walnuts
- ½ cup (85g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or oil, or line it with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until the color is uniform.
- In a separate bowl, beat the vegetable oil, sugar, eggs, and vanilla extract until the mixture is smooth and pale.
- Gently fold the dry ingredient mixture into the wet ingredients using a spatula until just combined.
- Stir in the shredded zucchini, chopped walnuts, and semi-sweet chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until the top is a deep mahogany brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
