Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts
- 1 tbsp olive oil (15ml)
- 1 tsp paprika (5g)
- 1/2 tsp garlic powder (2.5g)
- 1/4 tsp black pepper (1.25g)
- 1 cup (240ml) BBQ sauce
- 1 large bag (approx. 10-12 oz / 280-340g) tortilla chips
- 2 cups (225g) shredded cheddar cheese
- 1/2 cup (120ml) pickled jalapeños, sliced
- 1/4 cup (60ml) red onion, finely diced
- 1 avocado, diced (optional)
- 1/2 cup (120ml) sour cream or Greek yogurt (optional)
- 1/4 cup (60ml) fresh cilantro, chopped (optional)
- Salsa (to taste, optional)
Instructions:
- Season chicken with olive oil, paprika, garlic powder, and pepper. Cook in a skillet or boil until cooked through (internal temp of 165°F/74°C).
- Let the chicken cool slightly, then shred it with two forks.
- Toss shredded chicken with BBQ sauce.
- Spread tortilla chips in a single layer on the sheet pan.
- Top chips with BBQ chicken, cheddar cheese, jalapeños, and red onion.
- Bake in preheated oven until cheese is melted and bubbly.
- Top with avocado, sour cream, cilantro, and salsa (if desired).
- Serve Immediately!
