Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 1 tbsp olive oil (15ml)
  • 1 tsp paprika (5g)
  • 1/2 tsp garlic powder (2.5g)
  • 1/4 tsp black pepper (1.25g)
  • 1 cup (240ml) BBQ sauce
  • 1 large bag (approx. 10-12 oz / 280-340g) tortilla chips
  • 2 cups (225g) shredded cheddar cheese
  • 1/2 cup (120ml) pickled jalapeños, sliced
  • 1/4 cup (60ml) red onion, finely diced
  • 1 avocado, diced (optional)
  • 1/2 cup (120ml) sour cream or Greek yogurt (optional)
  • 1/4 cup (60ml) fresh cilantro, chopped (optional)
  • Salsa (to taste, optional)

Instructions:

  1. Season chicken with olive oil, paprika, garlic powder, and pepper. Cook in a skillet or boil until cooked through (internal temp of 165°F/74°C).
  2. Let the chicken cool slightly, then shred it with two forks.
  3. Toss shredded chicken with BBQ sauce.
  4. Spread tortilla chips in a single layer on the sheet pan.
  5. Top chips with BBQ chicken, cheddar cheese, jalapeños, and red onion.
  6. Bake in preheated oven until cheese is melted and bubbly.
  7. Top with avocado, sour cream, cilantro, and salsa (if desired).
  8. Serve Immediately!
