Ingredients:
- 43g unsalted butter, melted and cooled
- 50g dark brown sugar, packed
- 25g granulated white sugar
- 1 large egg yolk, room temperature
- 5ml pure vanilla extract
- 95g all-purpose flour
- 1.25g baking soda
- 1g fine sea salt
- 60g semi-sweet chocolate chips
- 1g flaky sea salt for garnishing
Instructions:
- In a medium bowl, combine the melted butter with dark brown and granulated sugars. Whisk vigorously for 2 minutes until the mixture is glossy and smooth.
- Add the egg yolk and vanilla extract to the butter-sugar mixture. Whisk until the emulsion is slightly lightened in color.
- Stir in the all-purpose flour, baking soda, and fine sea salt using a spatula until just combined. Do not overmix.
- Fold in the chocolate chips or chunks until evenly distributed throughout the dough.
- Portion the dough into 6 equal spheres using a large cookie scoop and place on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 10 minutes or until the edges are golden but the centers remain soft.
- Immediately after removing from the oven, use a circular cutter to 'scoot' the cookies into perfect circles. Top with flaky sea salt while warm.
