Ingredients:
- 4 cups fresh corn kernels (about 4-5 ears of corn or 1 lb / 450 g frozen corn, thawed)
- 1 tablespoon vegetable oil (15 ml)
- 1/2 cup mayonnaise (120 g)
- 1 tablespoon fresh lime juice (15 ml)
- 1 teaspoon chili powder (5 g)
- 1/2 teaspoon garlic powder (2 g)
- Salt, to taste
- 1/2 cup crumbled Cotija cheese (75 g) or feta cheese
- 1/4 cup chopped fresh cilantro (10 g)
- Lime wedges, for serving
Instructions:
- If using fresh corn, carefully cut the kernels from the cob. Heat the skillet over medium-high heat and add vegetable oil. Add corn and sauté for about 5-10 minutes until slightly charred and tender.
- In a mixing bowl, combine mayonnaise, lime juice, chili powder, garlic powder, and salt. Mix until well combined.
- Once the corn has cooled slightly, add it to the dressing and mix until evenly coated.
- Transfer the mixture to a serving bowl. Top with crumbled Cotija cheese and chopped cilantro. Serve with lime wedges on the side.
