Ingredients:

  • 4 cups fresh corn kernels (about 4-5 ears of corn or 1 lb / 450 g frozen corn, thawed)
  • 1 tablespoon vegetable oil (15 ml)
  • 1/2 cup mayonnaise (120 g)
  • 1 tablespoon fresh lime juice (15 ml)
  • 1 teaspoon chili powder (5 g)
  • 1/2 teaspoon garlic powder (2 g)
  • Salt, to taste
  • 1/2 cup crumbled Cotija cheese (75 g) or feta cheese
  • 1/4 cup chopped fresh cilantro (10 g)
  • Lime wedges, for serving

Instructions:

  1. If using fresh corn, carefully cut the kernels from the cob. Heat the skillet over medium-high heat and add vegetable oil. Add corn and sauté for about 5-10 minutes until slightly charred and tender.
  2. In a mixing bowl, combine mayonnaise, lime juice, chili powder, garlic powder, and salt. Mix until well combined.
  3. Once the corn has cooled slightly, add it to the dressing and mix until evenly coated.
  4. Transfer the mixture to a serving bowl. Top with crumbled Cotija cheese and chopped cilantro. Serve with lime wedges on the side.
