Ingredients:

  • 6 large eggs (approx. 360g)
  • 1/4 cup milk (60ml)
  • 1/2 teaspoon salt (3g)
  • 1/4 teaspoon black pepper (1g)
  • 1/2 cup diced bell peppers (75g)
  • 1/2 cup fresh spinach, chopped (30g)
  • 1/2 cup shredded cheddar cheese (60g)
  • 1/4 cup cooked bacon or sausage, crumbled (30g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease muffin tin cups with non-stick spray or line with silicone cups.
  3. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  4. Stir in diced bell peppers, chopped spinach, and cheese. If using, add bacon or sausage.
  5. Pour egg mixture evenly into muffin tin cups, filling each about 3/4 full.
  6. Place muffin tin in the preheated oven and bake for 15-20 minutes, or until egg is puffed and set.
  7. Allow to cool slightly before using a fork to gently lift out the egg bites. Enjoy warm or let cool completely before storing.
