Ingredients:
- 6 large eggs (approx. 360g)
- 1/4 cup milk (60ml)
- 1/2 teaspoon salt (3g)
- 1/4 teaspoon black pepper (1g)
- 1/2 cup diced bell peppers (75g)
- 1/2 cup fresh spinach, chopped (30g)
- 1/2 cup shredded cheddar cheese (60g)
- 1/4 cup cooked bacon or sausage, crumbled (30g)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease muffin tin cups with non-stick spray or line with silicone cups.
- In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Stir in diced bell peppers, chopped spinach, and cheese. If using, add bacon or sausage.
- Pour egg mixture evenly into muffin tin cups, filling each about 3/4 full.
- Place muffin tin in the preheated oven and bake for 15-20 minutes, or until egg is puffed and set.
- Allow to cool slightly before using a fork to gently lift out the egg bites. Enjoy warm or let cool completely before storing.
