Ingredients:
- 1 tablespoon (15 mL) olive oil
- 4 cups (about 200 grams) fresh mixed greens, washed and roughly chopped
- 2 cloves garlic, minced
- 1 teaspoon (5 mL) red pepper flakes (optional)
- Juice of 1 lemon (about 2 tablespoons or 30 mL)
- Salt and pepper to taste
- 1 tablespoon (15 mL) balsamic vinegar or apple cider vinegar
- 2 tablespoons (30 mL) grated Parmesan cheese (optional)
- 1 tablespoon (15 mL) fresh herbs for garnish
Instructions:
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and red pepper flakes to the skillet; sauté until fragrant (about 30 seconds).
- Stir in the mixed greens, tossing to coat with the oil and garlic.
- Sauté greens until wilted (about 5-7 minutes), stirring occasionally.
- Squeeze lemon juice over the greens and season with salt and pepper to taste. Add balsamic or apple cider vinegar.
- Toss to combine everything and remove from heat. Optional: Sprinkle with Parmesan and fresh herbs before serving.
