Ingredients:

  • 1 tablespoon (15 mL) olive oil
  • 4 cups (about 200 grams) fresh mixed greens, washed and roughly chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5 mL) red pepper flakes (optional)
  • Juice of 1 lemon (about 2 tablespoons or 30 mL)
  • Salt and pepper to taste
  • 1 tablespoon (15 mL) balsamic vinegar or apple cider vinegar
  • 2 tablespoons (30 mL) grated Parmesan cheese (optional)
  • 1 tablespoon (15 mL) fresh herbs for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and red pepper flakes to the skillet; sauté until fragrant (about 30 seconds).
  3. Stir in the mixed greens, tossing to coat with the oil and garlic.
  4. Sauté greens until wilted (about 5-7 minutes), stirring occasionally.
  5. Squeeze lemon juice over the greens and season with salt and pepper to taste. Add balsamic or apple cider vinegar.
  6. Toss to combine everything and remove from heat. Optional: Sprinkle with Parmesan and fresh herbs before serving.
