  • 1 lb (450g) boneless, skinless chicken breasts, diced
  • 2 tablespoons (30ml) olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon (5g) paprika
  • Salt and pepper to taste
  • 1 cup (120g) shredded cheddar cheese
  • 1/2 cup (120g) cream cheese, softened
  • 1 tablespoon (15ml) fresh lemon juice
  • 4 large flour tortillas (10-inch / 25cm)
  • 1 cup (150g) mixed greens (e.g., spinach, arugula)
  • Optional: Sliced tomatoes, avocado, or jalapeños for topping

Instructions:

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add diced chicken and season with salt, pepper, and paprika. Sauté until chicken is cooked through and golden brown, about 5-7 minutes.
  3. Stir in minced garlic and cook for an additional minute.
  4. In a mixing bowl, combine cream cheese, cheddar cheese, and lemon juice. Mix until well incorporated and creamy.
  5. Lay out tortillas and distribute the sautéed chicken evenly among them.
  6. Spoon the cheesy filling over the chicken. Add mixed greens and additional toppings if desired.
  7. Fold in the sides of the tortilla, then roll tightly from one end. Slice in half and serve immediately.
