- 1 lb (450g) boneless, skinless chicken breasts, diced
- 2 tablespoons (30ml) olive oil
- 3 cloves garlic, minced
- 1 teaspoon (5g) paprika
- Salt and pepper to taste
- 1 cup (120g) shredded cheddar cheese
- 1/2 cup (120g) cream cheese, softened
- 1 tablespoon (15ml) fresh lemon juice
- 4 large flour tortillas (10-inch / 25cm)
- 1 cup (150g) mixed greens (e.g., spinach, arugula)
- Optional: Sliced tomatoes, avocado, or jalapeños for topping
Instructions:
- Heat olive oil in a skillet over medium-high heat.
- Add diced chicken and season with salt, pepper, and paprika. Sauté until chicken is cooked through and golden brown, about 5-7 minutes.
- Stir in minced garlic and cook for an additional minute.
- In a mixing bowl, combine cream cheese, cheddar cheese, and lemon juice. Mix until well incorporated and creamy.
- Lay out tortillas and distribute the sautéed chicken evenly among them.
- Spoon the cheesy filling over the chicken. Add mixed greens and additional toppings if desired.
- Fold in the sides of the tortilla, then roll tightly from one end. Slice in half and serve immediately.
