Ingredients:
- 1 lb (450 g) boneless, skinless chicken breasts, diced into 1-inch pieces
- 1 tbsp (15 ml) olive oil
- 1 medium onion, thinly sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic, minced
- 1 tsp (5 g) ground cumin
- 1 tsp (5 g) chili powder
- ½ tsp (2 g) smoked paprika
- Salt and pepper, to taste
- 2 cups (150 g) fresh spinach, roughly chopped
- ½ cup (120 g) shredded cheddar cheese
- ¼ cup (60 ml) fresh cilantro, chopped
- Lime wedges, for serving
Instructions:
- Dice chicken breasts, slice onions and bell peppers, and mince garlic.
- In a large skillet over medium-high heat, add olive oil.
- Add the diced chicken to the skillet. Season with salt, pepper, cumin, chili powder, and smoked paprika. Sauté until golden brown and cooked through, about 5-7 minutes.
- Stir in the sliced onions, bell peppers, and minced garlic. Sauté for an additional 5 minutes until vegetables are soft and slightly charred.
- Add chopped spinach and stir until wilted, about 2 minutes.
- Remove from heat, garnish with cheese and cilantro, and serve with lime wedges.
