Ingredients:

  • 1 lb (450 g) boneless, skinless chicken breasts, diced into 1-inch pieces
  • 1 tbsp (15 ml) olive oil
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tsp (5 g) ground cumin
  • 1 tsp (5 g) chili powder
  • ½ tsp (2 g) smoked paprika
  • Salt and pepper, to taste
  • 2 cups (150 g) fresh spinach, roughly chopped
  • ½ cup (120 g) shredded cheddar cheese
  • ¼ cup (60 ml) fresh cilantro, chopped
  • Lime wedges, for serving

Instructions:

  1. Dice chicken breasts, slice onions and bell peppers, and mince garlic.
  2. In a large skillet over medium-high heat, add olive oil.
  3. Add the diced chicken to the skillet. Season with salt, pepper, cumin, chili powder, and smoked paprika. Sauté until golden brown and cooked through, about 5-7 minutes.
  4. Stir in the sliced onions, bell peppers, and minced garlic. Sauté for an additional 5 minutes until vegetables are soft and slightly charred.
  5. Add chopped spinach and stir until wilted, about 2 minutes.
  6. Remove from heat, garnish with cheese and cilantro, and serve with lime wedges.
