Ingredients:

  • 1 pound fresh broccoli rabe, trimmed and chopped into 2-inch pieces
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon salt (or to taste)
  • 1 tablespoon fresh lemon juice (optional, for added brightness)
  • Freshly ground black pepper to taste

Instructions:

  1. Rinse broccoli rabe thoroughly in cold water and drain. Trim the ends and chop into 2-inch pieces.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic to the pan and sauté for about 1 minute or until fragrant, taking care not to let it burn.
  4. Stir in the chopped broccoli rabe and sauté for 4-5 minutes.
  5. Sprinkle in red pepper flakes and salt, toss to combine, and continue cooking until the greens are bright green and tender but still crisp (about another 3-4 minutes).
  6. Optional: Drizzle with lemon juice and season with black pepper before serving.
