Ingredients:

  • 1 lb (454g) Smoked Sausage, sliced
  • 1 large Red Bell Pepper, cored and cut into chunks
  • 1 large Yellow Bell Pepper, cored and cut into chunks
  • 1 large Orange Bell Pepper, cored and cut into chunks
  • 1 large Red Onion, cut into wedges
  • 2 cups (approx. 225g) Broccoli florets
  • 2 medium Carrots, peeled and sliced
  • 2 tbsp Olive Oil
  • 1 tbsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Chop all vegetables into roughly equal-sized pieces.
  3. In a large mixing bowl, combine sliced sausage and chopped vegetables.
  4. Drizzle olive oil over the sausage and vegetables. Sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss to coat.
  5. Spread the mixture in a single layer on the prepared baking sheet. Don't overcrowd.
  6. Bake for 25-30 minutes, or until vegetables are tender and sausage is browned, turning halfway.
  7. Remove from oven and let cool slightly before serving.
