Ingredients:
- 1 lb (454g) Smoked Sausage, sliced
- 1 large Red Bell Pepper, cored and cut into chunks
- 1 large Yellow Bell Pepper, cored and cut into chunks
- 1 large Orange Bell Pepper, cored and cut into chunks
- 1 large Red Onion, cut into wedges
- 2 cups (approx. 225g) Broccoli florets
- 2 medium Carrots, peeled and sliced
- 2 tbsp Olive Oil
- 1 tbsp Italian Seasoning
- 1 tsp Garlic Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Chop all vegetables into roughly equal-sized pieces.
- In a large mixing bowl, combine sliced sausage and chopped vegetables.
- Drizzle olive oil over the sausage and vegetables. Sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss to coat.
- Spread the mixture in a single layer on the prepared baking sheet. Don't overcrowd.
- Bake for 25-30 minutes, or until vegetables are tender and sausage is browned, turning halfway.
- Remove from oven and let cool slightly before serving.
