Ingredients:

  • ½ cup (113g / 4 oz) unsalted butter, softened
  • ¾ cup (150g / 5.3 oz) packed light brown sugar
  • ¼ cup (50g / 1.8 oz) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups (180g / 6.3 oz) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (170g / 6 oz) roughly chopped semi-sweet chocolate chunks

Instructions:

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg until well combined, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
  6. Gently fold in the chopped chocolate chunks until evenly distributed.
  7. Spread the cookie dough evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until the edges are golden brown and the center is set. Don't overbake!
  9. Let the cookie bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into 16 bars.
