Ingredients:
- ½ cup (113g / 4 oz) unsalted butter, softened
- ¾ cup (150g / 5.3 oz) packed light brown sugar
- ¼ cup (50g / 1.8 oz) granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 ½ cups (180g / 6.3 oz) all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup (170g / 6 oz) roughly chopped semi-sweet chocolate chunks
Instructions:
- Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg until well combined, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Gently fold in the chopped chocolate chunks until evenly distributed.
- Spread the cookie dough evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set. Don't overbake!
- Let the cookie bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into 16 bars.
