Ingredients:

  • 2 lbs zucchini, sliced into 1/2 inch rounds
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/3 cup grated parmesan cheese
  • 1/4 tsp dried oregano

Instructions:

  1. Preheat your oven to 425°F (220°C). Note: Let it fully reach temperature so the zucchini sears immediately.
  2. Slice the zucchini into uniform 1/2 inch rounds.
  3. Pat the slices dry with a paper towel until the surface is no longer damp.
  4. Place the zucchini rounds in a large bowl.
  5. Toss with olive oil, salt, pepper, and garlic powder until every slice is glistening.
  6. Stir in the grated Parmesan and dried oregano last. Note: This ensures the cheese clings to the oil rather than clumping.
  7. Spread the zucchini in a single layer on a rimmed baking sheet.
  8. Roast for 12 to 15 minutes until the edges are mahogany colored and the cheese is golden brown.
