Ingredients:

  • 1 head of garlic
  • 1 tablespoon olive oil
  • Pinch of sea salt (optional)
  • Pinch of black pepper (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Cut off the top third of the garlic head, exposing the individual cloves.
  2. Place the garlic head in a small bowl. Drizzle with olive oil, making sure to get some between the cloves. Sprinkle with salt and pepper, if desired. Wrap the base of the garlic head in aluminum foil if you don't want it to dry out too much in the oven.
  3. Place the garlic on a baking sheet. Roast in the preheated oven for 45-60 minutes, or until the cloves are soft and golden brown. Check regularly and cover with foil if browning too quickly.
  4. Remove from oven and let cool slightly. Once cool enough to handle, squeeze the roasted garlic cloves from the bulb.
