Ingredients:

  • 12 Medjool Dates, pitted
  • 4 oz Goat Cheese, softened
  • ¼ cup Walnuts, chopped
  • 1 Tablespoon Fresh Rosemary, chopped (optional)
  • 2 Tablespoons Honey
  • Pinch of Sea Salt
  • Olive Oil spray

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking sheet with olive oil spray.
  2. Gently slice each pitted date lengthwise on one side, creating a pocket.
  3. In a small bowl, combine the softened goat cheese, chopped walnuts, and rosemary (if using). Mix well.
  4. Spoon a generous amount of the goat cheese mixture into each date pocket.
  5. Arrange the stuffed dates on the prepared baking sheet.
  6. Roast in the preheated oven for 10-12 minutes, or until the dates are warmed through and the goat cheese is slightly softened.
  7. Remove the dates from the oven and transfer them to a serving plate. Drizzle generously with honey and sprinkle with a pinch of sea salt. Serve immediately.
