Ingredients:
- 12 Medjool Dates, pitted
- 4 oz Goat Cheese, softened
- ¼ cup Walnuts, chopped
- 1 Tablespoon Fresh Rosemary, chopped (optional)
- 2 Tablespoons Honey
- Pinch of Sea Salt
- Olive Oil spray
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a baking sheet with olive oil spray.
- Gently slice each pitted date lengthwise on one side, creating a pocket.
- In a small bowl, combine the softened goat cheese, chopped walnuts, and rosemary (if using). Mix well.
- Spoon a generous amount of the goat cheese mixture into each date pocket.
- Arrange the stuffed dates on the prepared baking sheet.
- Roast in the preheated oven for 10-12 minutes, or until the dates are warmed through and the goat cheese is slightly softened.
- Remove the dates from the oven and transfer them to a serving plate. Drizzle generously with honey and sprinkle with a pinch of sea salt. Serve immediately.
