Ingredients:

  • 12 ripe apricots, halved and pitted
  • 2 tbsp unsalted butter, melted
  • 3 tbsp honey
  • 1/4 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 2 tbsp sliced almonds, toasted
  • 1 tsp fresh thyme leaves
  • 1/2 cup mascarpone

Instructions:

  1. Preheat the oven to 400°F (200°C). Halve the apricots and remove the pits. Arrange them cut-side up in a 9x9 inch baking dish, ensuring they are snug but not overlapping.
  2. In a small bowl, whisk together the melted butter, honey, sea salt, and cinnamon. Drizzle the mixture evenly over the apricots using a brush or spoon.
  3. Roast in the center rack of the oven for 20-30 minutes, or until the edges turn deep golden brown and the fruit slumps slightly.
  4. Remove from the oven and let the apricots rest for 5 minutes to allow the juices to thicken. Garnish with toasted almonds and fresh thyme before serving with a dollop of mascarpone.
