Ingredients:
- 4 cups (600g) fresh watermelon, cubed (about 1-inch pieces)
- 1 cup (150g) feta cheese, crumbled
- 1/4 cup (15g) fresh mint leaves, chopped or torn
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- Pinch of freshly ground black pepper
- 1/2 teaspoon honey
Instructions:
- Use a sharp knife to cut the watermelon into 1-inch cubes. Place the cubes in a large mixing bowl.
- Crumble the feta cheese into small, bite-sized pieces using your fingers or a fork, then add to the watermelon.
- Rinse mint leaves. Tear or chop into fine pieces and add to the bowl with the watermelon and feta.
- In a small bowl, whisk together olive oil, lemon juice, honey, and black pepper until well combined.
- Drizzle the dressing over the salad ingredients. Gently toss to evenly distribute.
- Transfer the salad to a serving bowl or platter. Chill in the refrigerator for at least 15 minutes to let flavors meld. Serve cold, garnished with extra mint if desired.
