Ingredients:

  • 4 cups (600g) fresh watermelon, cubed (about 1-inch pieces)
  • 1 cup (150g) feta cheese, crumbled
  • 1/4 cup (15g) fresh mint leaves, chopped or torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Pinch of freshly ground black pepper
  • 1/2 teaspoon honey

Instructions:

  1. Use a sharp knife to cut the watermelon into 1-inch cubes. Place the cubes in a large mixing bowl.
  2. Crumble the feta cheese into small, bite-sized pieces using your fingers or a fork, then add to the watermelon.
  3. Rinse mint leaves. Tear or chop into fine pieces and add to the bowl with the watermelon and feta.
  4. In a small bowl, whisk together olive oil, lemon juice, honey, and black pepper until well combined.
  5. Drizzle the dressing over the salad ingredients. Gently toss to evenly distribute.
  6. Transfer the salad to a serving bowl or platter. Chill in the refrigerator for at least 15 minutes to let flavors meld. Serve cold, garnished with extra mint if desired.
