Ingredients:

  • 10 fresh mint leaves (about 15-20g)
  • 1 ripe lime, cut into wedges (about 50g)
  • 2 tablespoons granulated sugar (30g)
  • 1 cup white rum (250ml)
  • 1 cup soda water (250ml)
  • Ice cubes, for serving

Instructions:

  1. Place 5 mint leaves and half of the lime wedges into each glass.
  2. Gently muddle the mint and lime together using a muddler or the back of a wooden spoon to release the mint oils and lime juice.
  3. Sprinkle sugar on top of the muddled mixture and continue to muddle until the sugar begins to dissolve.
  4. Pour half a cup of white rum into each glass and gently stir to combine.
  5. Fill the glasses with ice cubes, then top each with soda water, stirring gently to mix.
  6. Add a few extra mint leaves and lime wedges as garnish before serving.
