Ingredients:
- 10 fresh mint leaves (about 15-20g)
- 1 ripe lime, cut into wedges (about 50g)
- 2 tablespoons granulated sugar (30g)
- 1 cup white rum (250ml)
- 1 cup soda water (250ml)
- Ice cubes, for serving
Instructions:
- Place 5 mint leaves and half of the lime wedges into each glass.
- Gently muddle the mint and lime together using a muddler or the back of a wooden spoon to release the mint oils and lime juice.
- Sprinkle sugar on top of the muddled mixture and continue to muddle until the sugar begins to dissolve.
- Pour half a cup of white rum into each glass and gently stir to combine.
- Fill the glasses with ice cubes, then top each with soda water, stirring gently to mix.
- Add a few extra mint leaves and lime wedges as garnish before serving.
