Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs
  • 5 tablespoons (70g) unsalted butter, melted
  • ¼ cup (50g) granulated sugar
  • 24 ounces (680g) cream cheese, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 2 teaspoons (10ml) vanilla extract
  • Gel food coloring (red, orange, yellow, green, blue, purple)

Instructions:

  1. Combine graham cracker crumbs, melted butter, and sugar. Press into a parchment-lined 9x13 inch pan.
  2. Bake crust for 8-10 minutes until lightly golden. Let cool slightly.
  3. Beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract.
  4. Divide filling into six bowls. Tint each bowl with a different gel food coloring (red, orange, yellow, green, blue, purple).
  5. Spoon dollops of each colored filling randomly over the pre-baked crust.
  6. Use a toothpick or skewer to gently swirl the colors together, creating a marbled effect. Avoid over-mixing.
  7. Bake for 35-40 minutes, or until the edges are set and the center is almost set.
