Ingredients:
- 1 ½ cups (150g) graham cracker crumbs
- 5 tablespoons (70g) unsalted butter, melted
- ¼ cup (50g) granulated sugar
- 24 ounces (680g) cream cheese, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 2 teaspoons (10ml) vanilla extract
- Gel food coloring (red, orange, yellow, green, blue, purple)
Instructions:
- Combine graham cracker crumbs, melted butter, and sugar. Press into a parchment-lined 9x13 inch pan.
- Bake crust for 8-10 minutes until lightly golden. Let cool slightly.
- Beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract.
- Divide filling into six bowls. Tint each bowl with a different gel food coloring (red, orange, yellow, green, blue, purple).
- Spoon dollops of each colored filling randomly over the pre-baked crust.
- Use a toothpick or skewer to gently swirl the colors together, creating a marbled effect. Avoid over-mixing.
- Bake for 35-40 minutes, or until the edges are set and the center is almost set.
