Instructions:

  1. Place the quinoa in a fine-mesh strainer and rinse under cold water for about 30 seconds to remove bitterness.
  2. In a medium saucepan, combine rinsed quinoa, water (or broth), and salt (if using).
  3. Heat the mixture over medium-high heat until it comes to a rolling boil.
  4. Reduce heat to low, cover the saucepan with a lid, and simmer for 12-15 minutes until the quinoa has absorbed all the liquid.
  5. Remove the saucepan from heat and let it sit covered for 5 minutes. This helps with the fluffiness.
  6. Use a fork to fluff the quinoa gently before serving.
